Cinnamon Baked Plantains

Plantains:- An underrated superfood that is a loaded with fibre , vitamin A, vitamin C and B6. Plantains also contain magnesium and potassium minerals.

1 Timothy 4:8 - For bodily exercise profiteth little: but godliness is profitable unto all things, having promise of the life that now is, and of that which is to come.

Ingredients

3 Large Plantains

1Tbsp Cinnamon Powder

1 Tbsp Coconut Sugar(optional)

Directions

Peel Plantains and slice at an angle. The slices can be long and about ¼ inch in thickness

Place on a generously greased medium sized baking tray

Gently and evenly sprinkle 1 tbsp of cinnamon powder onto the plantains and do the same with 1 tbsp coconut sugar (optional)

Place in oven/toaster oven alternatively at 350 degrees Fahrenheit.

Let bake for 20-25 minutes or until golden brown

Let cool and serve with your favourite meal as a complimentary and succulent side dish. Serves up to 4-6 persons.
